The bypass pipes do sound great and there's no better way to drop 50+ lbs off the rear of the car where weight loss counts the most, however you're correct that they are rediculously loud.
I had them on my old C2 for a few weeks and couldn't take it anymore. I actually felt like I couldn't even enjoy driving the car on the street with them on there because it's soo loud when you are driving in a "spirited" manor that EVERYONE around you knows about it.
I've got a set for the GT3 in the garage that I haven't even managed to motivate myself to mount for track days, let alone the street.
I'm convinced that cat delete + aftermarket mufflers is the way to go. Most aftermarket mufflers will save you 10lbs per side plus cat delete saves another 20. Nearly the same weight loss, get a few HP from cat delete plus it's a managable sound level all the time.

Luckily, I stumbled upon a killer deal on a set of Fabspeed mufflers on Craigslist yesterday so I picked those up for about half the price of a brand new set, so I'll be installing those next weekend.
I also met up with John (the old owner of the car yesterday) and he hooked me up with a front strut tower bar, so that should help stiffen up the front a hair.
