I'm looking to do a hardline setup in my 97 eclipse and I'm looking for some nice looking fittings. Something polished or chromed. Where are you guys getting your fittings from?

Check out fairview fittings as well. I get my fittings through them and their steel fittings look pretty nice. I think they also have stainless.
Or head down to your local pneumatic/hydraulic hose shop. They're typically cheaper and will have everything you need. That or a heavy truck shop.1958 Chevy Apache shop truck build

Check out Swagelok fittings. Their's are a little more polished, but come with a price.

Why not do it the right way and flare whatever tubing you wish to use to 37* and use -AN fittings?
The tools to do it right aren't cheap though.
Flare tool - tubing has to be .035 wall thickness or thinner.

Bender for 3/8th tubing
RIDGID's 400 Series Instrument Benders are designed for bending annealed copper, steel and stainless. Click here to learn more.
3/8 = -6AN so use -6AN tube nuts and collars. Any company may do, but I'd recommend Fragola, but I'm fairly certain Russell carries polished or chromed fittings.
I got all my tubing from McMaster-Carr.
You will get results like this:
